I switched from 8.1 to 10 with the same upgrade, OP, and I can't recommend it.
After the installation it takes at least an hour to get rid of all the bloatware and spyware, as long as you know what you are doing.
Things like Cortana and Windows Defender still run even when you disable them in the menu, and getting completely rid of them through internet tutorials is fucking annoying.
I went from 70 processes on average after booting with Win8.1 to 120 with Win10, even after disabling everything.
Windows 10 looks nice, though.

plus i didn't use any themes, it just felt so dated to me for a modern os. if the classic shell looked just like xp and 2k i would've been fine with it but it doesn't

not all software. my computer boots faster, like 3 seconds after the windows loading screen into desktop where 7 took about 7. also some software had issues, like libraries in cad software would lag a shit ton
W10 looks nicer and have virtual desktop feature, that alone is more than enough for me. what does w7 have? ricing? just use ubuntu instead.
I have them in dual boot, and both boot in like 5 or 6 seconds. But everything graphics related is slower on 10 than it is on 7. CPU benchmarks also score lower.
Windows 10 is still unfinished and buggy. Wait until 2020, then decide between 8.1 and 10.
Other than a couple of minor UI improvements, which you can achieve with 3rd party software on 7, there is no benefit whatsoever.

You can actually disable the automatic downloading in the Microsoft store settings. However, the settings for it is somewhat hidden away and seems to take a couple of tries to actually disable it.

just installed 2016 LTSB in VM, it's not quite as shitty, sure you can turn off most/all of the windows store and other botnet shit in home/pro, but it's easier to just start with LTSB, fuck the "feature" updates anyway it's all useless bloat.
I think I will probably stick with 7 for at least another year though.
Classic answer I always give, as somebody who was running 7 for 6 years and now runs 10 Edu since last winter:
If your 7 installation works fine, there is no point in upgrade yet. If you need to make clean install for whatever reason like buying new PC - install 10. Both 10 and 7 are fine OS, but I like 7 more. 10 doesnt have any advantages over 7 in my opinion, aside from being newer so devs will optimize their software towards 10 rather than 7, not to mention longer support.

Just remember to read how to use Group Policy editor, most options moved here in 10. And get some sort of Enterpise (normal, Edu or LTSB). Or Server.

I just installed Win10 on a x220 memepad and it's so much smoother than 7 ever was. It's not bad at all if you don't count all the botnet shit.
