I used Gentoo from 2006 to 2008. That was my first distro... one of professor said if we would like to pass his lectures we must install Gentoo. I did and succeeded but failed his exams anyway.

it was, and still is for people who are unfamiliar with gentoo or linux in general.
imagine being a tech illiterate with a tech issue and being told to install gentoo to fix that issue. thinking it's just another program for Windows you go to the website and follow the instructions, not really understanding what the commands you type actually mean. by the time you think "hmm this is getting too involved with the typing stuff, maybe I should stop" it's already too late because you wiped your hard drive.
having said that, gentoo is literally the best operating system on the planet. it provides the highest customization possible. nothing quite like it. but it's not for everyone.

compile everything from source with all the features you want and none of the features you don't want, via USE flags. also compile everything specific to your hardware. doesn't matter on powerful machines, but makes a huge difference on toasters.
Portage makes it as easy as a binary distro. You just trade time spent compiling for the ability to customize every package on your system and a slight performance boost. Not like it takes too long on a decent computer and not like you can't still use it simultaneously though.

Doesn't the compiler determine the actual generated instructions? Why does the machine matter?

But I can still customize everything on Debian. The source code is available and I can change, recompile a file/translation unit and replace the old one.

Of course, you can do this on any distro. The point is that it's handled by the package manager. Look into portage, use flags for starters: wiki.gentoo.org
As for why the machine matters: wiki.gentoo.org
But essentially it can target your specific processor instead of outputting something that can run everywhere.
Real talk, this shit is just a meme in most cases. I installed it and had it running nicely, but updates are too time consuming to be practical for everyday use. Went back to Arch and I'm fine.
