AFAIK, the only thing a site can do is use robots.txt to ask the racist, sexist, bigoted archive sites to stop archiving them. But robots.txt is voluntary and sites can just tell Vice to fuck themselves, right? Is there anything else they can actually do to fight the "violence" against "ethical journalism"?

Probably, we don't know. Internet archives are probably a gray area that nobody has bothered to challenge in court. They don't want to risk losing huge amounts of money when a law suit happens so they just honor the robots.txt. Just use a mirror site like unvis.it and archive the mirror.

Hard to say without a legal team. If you don't modify the site and archive it on a user request, I guess you're in the safe harbor. Respecting robots.txt isn't per se required but would help you in front of a judge.

There has been precedent with a case against Google's caching. Someone put up his images where he knew Google would crawl and deliberately didn't put a robots.txt in place, then sued Google for infringement. Google won because he didn't use an industry standard opt-out, but I don't remember the case so I can't quote directly.
