It might work against guys who don't know the first thing about computers and leave it turned on while being raided, but if they unplug the tower/remove battery from laptop at any moment and the RAM isn't frozen within like, a second, there isn't much that's gonna be preserved, if anything. Also no guarantee that any given keyfile is going to be stored in the RAM anyway, it all just depends. Dealing with encryption is always a massive bitch, but from what I've heard the courts have started making it just as big a deal to not comply or to have destroyed evidence. I've had to investigate and report on the likelihood that evidence has been tampered with; microwaved, degaussed, wiped, such and such. If we determined that this was the case, it'd lead to serious legal consequences. Although, you might dodge being put on a sex offender's registry so it could all come down to damage control.

For what purpose would they freeze RAM of unpowered computer?

Yes and no. When we were ordered to destroy hard drives, we had to do a triple-pass wipe, open the hard drive, and smash the internal platters till they were dust, then smash the internal controller board, and finally throw it all in a special shredder. When it comes to nuking or degaussing it really all depends on how long and how thorough. Degaussing is becoming less and less effective as platters become denser and denser, and to my knowledge SDDs are largely immune to the process. Microwaving would probably be more effective, but I wouldn't rely on it. I've seen some seriously fucked up hard drives get at least some data recovered, and I've had to sift through chunks of garbled hexadecimal to try and piece together exactly what kind of files were likely on there. The recovery guys were a different vendor than us; we'd outsource that kind of work to folks who had clean rooms. In short: remove the platters from existence just to make sure.

You can't just not tell them the access to the safe, with safes they will just drill it open/break it, but with proper encryption and a good password that will take forever to bruteforce, so you are ordered to comply with a decrypted form of the data

Legally they can detain you if they find you in contempt of court; so if they give you a court order to hand over your keys and you don't comply then you'll be held in contempt. That can lead to detainment and an added charge. If you try to be clever and tamper with the system at all you'll be found in contempt of court. That can lead to massive charges on top of the charges already posted against you. Ultimately, if you just don't comply, then you'll likely get jail time, but you might dodge a sex offenders' registry (although any employer/government agency could see the details of the case and de facto make you a sex offender). Not a lawyer, but every lawyer I've worked with has met this issue at some point. A lot of the older lawyers who aren't familiar with e-discovery tend to try and treat handing over passwords like it's a 5th amendment issue and end up running afoul of judges who are more than happy to slap their clients with contempt.

2ez. A cursory hexadecimal analysis is enough to show a drive is encrypted. If you're running any kind of filesystem it should have specific headers and a pattern in the hexcode. Any given file has headers and a pattern. Deviation from that could either be corruption or encryption, but encryption is typically more obvious. Corruption tends to have size discrepancies and glaring oddities like size discrepancies and functional failures. An encrypted drive usually trigger a "this drive will need to be wiped" prompt, as well.
