It's not uncommon for power users to need a lot of cores. Running a plex server, and managing all my video content, means I usually have at least a short list of media I need to run through my transcode scripts. I've been working through all the seasons of Psych I bought on DVD, and the files are like 2GB for 40 mins of 720p video (and it's kinda a shitty 720p, too). With h265 and a CRF of 20, I can get it down to 300MB or so with no perceptible loss of quality. However, it takes about an hour to transcode 40 mins of video. I wouldn't want that to be any slower than it is, and I have a 6core/8thread CPU (i7-6850k).
I also find myself compressing files with XZ for its superior compression ratio, and XZ is pretty slow. So it's nice to be able to just go "xargs -P12" and speed it right up.
For that matter, xargs/find/parallel are great for using all your cores.

The only benefit to many cores is that you can run more shit simultaneously. Whether that actually matters to you obviously depends on what you are running and how programs are optimized to run. If you have a bunch of VMs in the background, ok yeah it will be beneficial because VMs are processor whores. If you just have your web browser open in the background and you are playing a game on Steam, there's not much benefit to be had. It's possible that some programs can be better optimized to utilize more threads when needed, but that's hit or miss depending on the program you are talking about. At that point, you are better off getting processors with stronger cores vs having more cores.
