On normal ubuntu use the unity tweak tool.(you can find it in the store if you don't want to use the terminal)
After that you can find themes to install (omgubuntu.co.uk regularly shows them off).
For anything else you might need to install another desktop environment

I want something that doesn't necessarily have to be "beautiful" but it's really usable.
And by usable I mean, I can drag and drop shit around between different applications, I can preview files quickly, I can reorganize windows in a way that it's not a constant mess...
