What are most of the things you do on your computer? I'm interested in how anything that is easier and quicker using a terminal can also be what you spend most of your time doing. Please enlighten me.

I can service my Elitebook just fine without voiding the warranty. How else would I be able to install new ssd, more ram or whatever?

I have yet to come across a "WARRANTY VOID IF REMOVED" sticker in my Lenovo (not even a Thinkpad).
A friend of mine recently had some overheating problems on his HP. I fixed it by replacing the dried up thermal paste. Figuring out how to get it apart was the hard part. I wound up nearly completely dismantling it before I could get at the heatsink, but get at it I did. No "WARRANTY VOID IF REMOVED" stickers to be found.

No offense but I think the burden is on you here. This has to be bait. What tasks that take place outside of a web browser (and even then if it's work related stuff curl is used extensively all day everyday) are faster/easier with a gui (or at least so much so that you somehow can't fathom someone using the command line)?

The answer to your question is literally "almost everything" and you would need to be much more specific.

I was recently in a position to spend $2800 in store credit on a nice new laptop for day to day use. I'm currently using a six year old thinkpad I paid $190 for.

i know this is an age old meme but should I ACTUALLY install gentoo? I've used arch, manjaro, and ubuntu but never jumped full ship into freetardum.
