Not that user but, a dull knife requires more force to cut, more maneuvering of the object being cut do so correctly.
In addition a sharp tool is handled properly to avoid accidents. A more blunt knife instills a peace of mind that should not exist when handling potentially dangerous tools.
This is similar to the firearm rule to treat every firearm as if it were loaded. It is a habit that needs to be maintained constantly.

Just as an FYI, that is more of a party trick than an especially challenging test of sharpness. The tomato is cut at the bottom so it sticks to the cutting board and with a slicing motion like that any very sharp coarse edge finish on that knife should be capable of slicing the tomato like that.

Push cutting newsprint across the grain of the paper at 90 degrees is a much more impressive test of sharpening skill.

Diamond plates are fine for western style cutlery but I'd definitely use waterstones for Japanese style cutlery as microchipping can be a real issue using diamond plates on them.

Hand sharpening typically produces much better results than machine sharpening, for a bunch of reasons you probably aren't interested in the details of.

Actually, I am interested in knowing.

Basically most of my injuries have been because I used a knife that required too much force to chop/slice/dice. So after a few years I started sharpening my knives (to 6000 grit) and suddenly I rarely had accidents when preparing ingredients for food.

However I also found that all the stones I bought were never worth it. The fine diamond stone side is already 800 grit and coarse side 325 grit and going beyond that only improves usability only by a bit desu.

We don't even cut shit that thin like OP's pic. That's up to the food art faggots in those $100/meal restaurants.
