You can use a vim plugin to preview the document in real time, I believe it's called vim-latex-live-preview, alternately there is LyX, which is not exactly a WYSIWYG editor but I think does what you would want it to.

I don't have a need to write complex math equations, but LaTeX is fantastic even for basic letters and essays.
You don't need to mess with formatting at all - you just worry about the content and the compiler makes it pretty for you.

If you actually did some research you would know you could install a plugin/package in your favourite editor to compile latex on the background after a user defined interval. Also you could define keystrokes to quickly paste some templates. This makes it effectively WYSIWYG with a small latency, just like overleaf but offline.

Don't bother with books, just look up a basic guide or look at some templates, then just search for what you want as the need arises. Honestly most things are quite intuitive and you'll have a good idea of what commands to use after a short while.
