What's a good, cheap, budget laptop for my gf to use for strictly word documents, excel spreadsheets, and internet browsing? She'd be using it for work and screwing around with it at home. I want to get something that is going to last a couple of years, and able with withstand her generally not caring for it.
Would a shitty $170 dollar HP really do the trick or do you guys know of any hidden gems out there?

Chromebooks can't use Word/Excel except for the free online versions. I second the Thinkpad if you want to run Windows programs.

I'd recommend you an X61, It's cute, small (12.1" ), 4:3 aspect ratio (comfy for office works). Another small Thinkpad (12.1" ), but with a 16:10 aspect ratio is the X200 or if you preffer something bigger, go for an T400 (14", 16:9 )

Don't buy consumer grade laptops. Buy cheap enterprise/business-grade laptops like used Thinkpads. Businesses just want to get rid of them and you get a lot for your money and Thinkpads are easy to upgrade or fix if something fails (lots of spare parts available) . Buy a used thinkpad, but also get an SSD to make it fast and because used harddisks are usually shitty so it should be changed.
Thinkpads also can handle it if you spill a bottle of water on it. Look in the gentoo wiki, there is a guide for buying used Thinkpads.

elitebooks are great. a 2540p and an ssd will make a great laptop. thinkpads are very good too.
