have you tried the microwave method?
basically you have to fry the chip the new operating system is installed on without frying anything else.
foolproof instructions:
1. put iphone in microwave
2. set it to 700W, 15 seconds (this will only destroy the iOS 11 chip)
3. connect iphone to your mac or pc
4. open itunes and pick the recovery option
if it doesn't work on the first try (i.e. if the recovery option does not show up and the iphone still boots into iOS 11), repeat steps 1 to 4.
note that you won't be able to install iOS 11 ever again, since the storage chip for it will be broken.

Apple signs their software versions and when you try to install a firmware they check it against their update servers. The firmware version you're using is verified remotely and if accepted Apple will let you install it, only the most recent versions are signed and beta releases, older versions are only signed for a little while after major updates.
The window of opportunity to downgrade back to any version of iOS 10 has been missed, I'm sorry bro you're stuck.
