They are very easy to adjust. Most links should have screws so they can be removed very easily. Depending on the clasp you get it should also have micro-adjustment.

Could be literally any LED watch, they were the first electronic digital watch in the 70s and the display used so much power that you had to press a button to show the time, Bond wore one in Live And Let Die. But as technology improved they became extremely cheap and they were as ubiquitous as modern day quartz.

What specific questions should I ask about the watches when I give him a visit, other than show me the papers etc etc.
I'm only in HK once a year and this dude is selling them at pretty good prices. Almost too good, but from the pics I see and his only history he seems to know his stuff.
His shop is in Quarry Bay which from what I know is not traditionally the upscale shopping area, which worries me a bit. It's not a poor area, but you expect to see high end sellers closer to downtown Central or Causeway Bay.

I have some pictures I took of my 114270's serial numbers and the papers from when I bought it earlier this year, I'd be willing to post them if it helps you have a reference for what everything is supposed to look like.

Here's the photos in case it helps. 1. Take off the bracelet to check the engravings in between the lugs. At 12 o'clock it says "orig rolex design 114270" and at 6 o'clock it says "stainless steel" and the serial number. The first letter of the serial number indicates the year of manufacture if it's pre-2010. 2. The serial number on the watch should match the papers. The bracelet also has its own serial number engraved in 3 locations: on the last lug before each endlink and on the folding part of the clasp. 3. A genuine crystal will have a laser etched crown logo. It shouldn't be visible under normal conditions, you have to shine a flashlight at a low angle from 12 o'clock and the crown will be visible just above 6 o'clock. A replacement service crystal will have an "S" in the middle of the crown. If the crown is easily visible without the flashlight it's probably fake. 4. My watch from 2001 has no rehaut engraving. Later 114270s will have the engraving, look up some guides on what it's supposed to look like because those are an obvious tell for fakes.
Maybe research the fake watch forums if you want a better idea of specifically what to look for. I know that generally one obvious flaw with fake Explorers is that they reuse the same case as for similarly-sized Datejusts so the proportions of the lugs and the bezel will be a little bit off. plain bezels on DJs are a little curved, but the bezel on an Explorer is flat.

Him having his own shop with contact info is a good sign though. Still... be wary. If something doesn't feel right, walk away, and pay extra for peace of mind somewhere else.
