Because since 2004 all cpus have thermal protections and throttling, so a faulty cooling ends up with nothing in particular.

By todays standards, those CPUs are "low power" ones - at something like 50-70W tdp. They simply had no thermal protection circuitry and did not throttle, so when run without heatsing they burnt themselves.
