What do you suggest to use to replace Google apps and most common apps to at least make them less intrusives ? (open source options first)

A non android phone to start with.

f droid should be obvious; just get everything you can off f droid
signal for sms
openstreetview or whatever it's called for maps
put lineageOS on it and don't store sensitive data on it in case of security breach
firefox as a browser works fine. phone default is often ok, lightning is ok
there's this guy on f droid who makes all these orange-and-white apps and they're all fantastic and updated frequently, would recommend

Root, install System App Remover, delete most of the bloatware gapps, but you're going to be stuck with some Gapps unfortunately.

You still have an internet access so you can call and text just fine. I stopped using SIM a year ago. SIMs are backdoors themselves and are completely useless and outdated technology.
Removing a SIM card removes no features, but greatly reduces the attack vectors against your device.

Your network provider has root access on your device while you have a SIM plugged in. They can also fetch all hardware and most software information from it. Giving such power to someone just so you can use SMS is retarded.

If you don't need it, good for you. I make and receive lots of regular phone calls every day because of work and other stuff. I would love to ditch SIMs, but unfortunately I still have to use a lot of regular telephony for now.
