It's because of the smaller bezel and dial diameter, the MM300 case extends a fair bit instead of the vertical cliff that is the pelagos case.

I would go Pelagos. It's a more functional design and its movement has better shock resistance properties for both accuracy retention and damage due to the beefy balance bridge free sprung design.

From an accounting perspective those research and development costs, both for technical aspects of the watches and for creating the capital equipment and processes to produce on the order of a million watches a year at the targeted quality levels ARE costs of making the watches.
Rolex essentially had to develop, from scratch, the capital equipment and logistics required to produce nearly a million watches a year at Rolex quality levels. It's probably the highest volume produced complex mechanical object at that level of quality ever produced in world history. It's incredibly impressive what Rolex achieves producing at the volumes they do.
