Yes. To sum it up, Photoshop includes a unique hash within each and every image saved in it which can be used to determine if the image actually passed through the software.

How can you detect and strip it?
You can sometimes tell for sure that an image is shopped (if there are blatant giveaway mistakes). You can never be 100% sure that that it /isn't/ shopped (it might be a very good one, using techniques you don't recognise).
An expert will be able to give a very good guess.

simply acquire a copy of the original non-photoshopped file and then run diff on the two of them
