Lineage is the best mobile OS(ROM/Software, whatever you wanna call it) you can get on a mobile device. Of course some people may prefer some other ROMs with slightly different features. I'm extremely satisfied with 14.1 on my Redmi Note 3 Pro,before that I rocked Cyanogenmod on LG G2, and before that on my LG 4X HD.

Using Oreo OxygenOS with Magisk on my Oneplus 5T. Tried some custom ROMs but all of them had issues with bad LTE signal for some reason. Only reason I would really switch is to get rid of system Google bloat (which I can already do now using root but too lazy)

Most apps will still work. The only google apps I use are maps and hangouts. Maps works perfectly, and hangouts works but no pictures load (profile pictures, pictures sent to you, etc).

Can't cast with Chromecast if you use that at all. Haven't bought a Miracast stick to see if that'd work, but I'm not hopeful.
Uber/Lyft is also spotty and barely works if you rely on those apps at all. May just be me though, whatever.

Maps don't even need play services to work. It's merely for botnet features. Better performance, faster updates, fresher Android versions, more useful settings, more drivers(my stock ROM wasn't able to read NTFS thumb drives for example), less problems with root and sd cards, better standby battery life, but SOT is mostly the same(you can improve it by kernel tweaking though). If you aren't using a custom ROM it's still worth it to install twrp - absolute life saver.

What do you need of Google? I only needed Maps, because Osm+ doesn't work great for me (yet). But AFAIK even that isn't needed for Maps.
Use Yalp. It'll be easy to use Japanese apps. For region I think it won't be a problem (it shouldn't if it worked on your stock ROM).
For Japanese apps, sometimes you only needed to change the "region" on the settings, so even on stock it worked.

Magisk is a rooting method. It also enables the use of Magisk modules in the manager app, which function a bit like Xposed modules. They bring some nice tweaks and functionality.
