Could I have a short explanation on what the actual consensus about everything being a botnet is?
I mean, what's behind the theory: google, microsoft, etc. want to use our systems for data mining, to spy us, to do research, or for what purpose and, most importantly, why should I even care?

It's not a theory, it's fact. The data, the research, the spying, it's all about revenue and power. Data sells, it's all for advertising purposes, ads make money, this is why adblockers are hated by websites and companies. This data also goes to the government and while many have said that the data won't be used against people, the recent right-wing purge on social media has proven otherwise. It may not affect you now, but it could at some point. It's the same thing with gun rights, police brutality is already a thing, but if all guns are banned, then nobody has a chance of doing shit about it.
This. The people that encompass the general public are the same people that can go and work for these organizations. If you aren't willing to tell everybody in the world every little detail about your life, then why would you trust the same kind of people who have supreme authority over you with this information?

Debian is free by default and is one of the best distros you can get period. Although the two main issues that keep it from being recommended are the FSF's strict guidelines for free software and it having SystemD. You could either use Devuan instead (Debian fork without SystemD) or simply remove and replace it yourself.

Debian 9 here - re the first two links, the DNS entries are commented out and also blank (ie no 8.8.8.8 or anything elses.)

Sure, Gentoo would be needlessly troublesome if you used this machine to update itself vs compiling on a faster desktop machine in the network.
Then again, it's not that different from what people had when Gentoo started, and between compilers getting better and programs getting bigger it's almost neutral overall [save for some bloat browsers and office suites].

Makes sense. I don't say you should; but if you wanted or had to, it wouldn't actually be the biggest disaster.

Someone always doesn't like a distro.
In terms of amounts of RAM and CPU spent doing things, they don't actually vary much between Ubuntu/Mint/Debian, Fedora, Sabayon, Suse and so on if you use the same software anyhow.
It's mostly about picking software well enough. Awesome or dwm are going to be less resource consuming than KDE or GNOME, mpv is generally going to be lighter than kodi, st beats urxvt, and so on.
You probably don't need to do all THAT much to get to an okay state of affairs with 2GB RAM + some swap and a dual core APU, though. It's weak enough that you can't run every bloated thing at the same time, but it's surely not an exercise in really picking everything utterly minimalist for it to work.

Other than that, I heard Xubuntu (not Ubuntu) is pretty nice for low spec comps and old laptops.
Don't overestimate the dual core CPU. It's way worse than a pentium 4, for example. Seriously, it sucks. Sometimes it stutters while watching .264 720p videos.

XFCE can save some resources over GNOME, sure.
But there won't be much of a difference to just installing XFCE on Ubuntu and selecting that on boot (hell, even with GNOME still installed).
Basically use your package manager to drop stuff that uses too much resources and use more lightweight programs until it works alright.
