Ryzen wasn't released when I built my machine. Next processor I buy will be AMD, if I can't get a reasonable RISC-V or POWER9 chip/board, though.

This. The 5820K was the Ryzen of 2015. The performance is still good, higher single thread, matches a 8700K stock.
The CPU is already sold, I'll disassemble this rig tomorrow, then wait for May to buy a 2700X.
Until then I buy a 570X, H150i PRO and lots of ML RGB fans. This will be a wonderful new build.

Going to upgrade this dell from 8gb single to 16gb dual, would I see a benefit or nah? I do VM and a lot of conversion (video/audio) on this thing.

Yeah, especially if you run lots of VMs at once. You'd also see a lot of benefit from an R7 1700 vs a 1600.

typically maybe 1 or 2 VMs at a time, Linux and Windows 10 for debugging purposes for work software. It's an older Dell E7240, so won't be able to upgrade to a Ryzen hah
Surprisingly, performance isn't too bad even right now on just single 8gb, I have 4gb allocated to Windows 10 and 2gb for Mint, both run okay but not at the same time. If I run win10 with 2gb it gets a little sluggish but I can have both running at the same time.
I think I'll jump on a deal I found for 80 bucks to jump up to 16gb from the 8 I have now.
