As for why they don't simply buy it on the day they need it, supposedly nothing is open on the 24th or 25th of December, and so they buy it on the 23rd (or maybe even before, I can't remember exactly).

IIRC, another reason they buy it a few days in adavance is that, since carps eat right of the ground of wherever they live, their insides are full of mud when you first get them out of the water, so they need to stay in fresh water for a while so all the dirt can come out. No idea how long that would take though

When I buy live-clams from supermarket, I always do that.
You need to leave the clams in fresh water for 2-3 hours at least to get rid of mud and sands from the clams.

Goldfish are a different species since they got domesticated. Actual goldfish don't get as large as your picture because yours is just a regular carp with bright colour.
