what kind of yeast do you use? i do mead with champange yeast and let it run dry so it's not sweet at all nor alco tasting, just dry and sparkling. do you have any special tips?

In portugal we just drink beer or home made "Água Ardente"(think bootleg moonshine but tastes better and goes up to 24%). Someone people drink White/green whine in summer too.

Also can you post how you do it?I want to try and make some alcohol at home but so far i only made some Kvass(was really good too).

You'll need the following for the set up.
>fermenter vessel/bottle 25-30 L (glass is the best)
>air lock
>tools that have been sanitized completely (boiled)
Just google "brewing kit"
This is what you need to make the mead
>22 liters of pure water (boiled clean)
>4.5 kg of good quality honey for the base and 1.2 kg extra for sweetening
>yeast ( White Labs PurePitch is my favorite)
Now this is how I make the mead.
>add the first 4.5 kg of honey to the 22 liters of water, stir it completely in a big pot
>heat up the mix boiling to kill of natural yeast in the honey for 1-2 minutes
>let it cool
>then heat it to 98 degrees C and pour into the fermenter vessel
>read instructions on the yeast and add it to the mix and stir for 10 minutes
>seal the fermenter vessel with a lid and airlock
>let it stand in room temperature (23-25 degrees)
That's the basic.
The airlock is very important on top that lets air escape once the fermenting process has begun, which will start about 24 hours from the start of the process.
The mixture should ferment for about a month, at which time you can begin the process of “racking” or siphoning the mixture into a second container leaving sediment in the bottom of the first container. Then cover again with an airlock, and let the mead sit for another month or even longer. This time, you can siphon the mead into bottles and cork them.
During the transfer into a new vessel you can add apples, cinnamon etc and the rest of the honey to sweeten it. Then let it ferment for another month before siphoning the mixture into glass bottles.
Done.

my process is largely the same. difference being i use 10L glass because all my 30L glass is tied up with wine lol. and i don't even bother dealing with wild yeast because once you have a good stronk pitch yeast the wild bois will die off from all the alcohol created by the cultured yeast. and also, i don't backsweeten the brew, i let it dry out (but this is just personal preference). oh, and herbs, i just add them in a little cloth sachel during the initial heating and remove once fermenting starts.
