Using the stem nominalises the verb (but not in quite the same way as other methods of nominalisation in Japanese). Thus うんこ食い means either "poo-eating" or "poo-eater". The distinction isn't always clear, but in this case I guess it's the latter. Here are some other examples:
人殺し both the action and one who does it; murder and murderer (compare "homicide" in English)
友達作り just the action of making friends 自分探し just the action of finding oneself Note that both of these typically refer to general goals rather than their actual, specific fulfilment.
神隠し god-hiding (or "spiriting away", like in the title of that film)
鬼殺し demon-slayer; there are several brands of sake called 鬼ころし
I know what you meant. Spanish has 5 vowels like Japanese for sure, but we'd still have trouble with l's and r's or b's and v's. It also has the th-sound like English. I don't think Spanish pronunciation is much easier than that of English for Japanese.
