I don't know about Germany but in Norway we have tons of legitimate /out/ areas to hike in, but because of the obsessive hiking culture we have, you will see wooden signs almost anywhere. But we also have wildness without signs and trails, but those places will generally be a bit rough pic related.

You can see these trees everywhere in north, but they are only growing in highland area if you are in central Japan.
