Then why can only 1/3 of Mt rainier be seen from Vancouver? Its almost like the earth curves so you cant see the bottom 2/3 of it

That's not even close to the size of Greenland. It being that large is simply the product of that map trying to match a sphere to a flat surface.

On the Mercator map projection, the surface gets increasingly distorted as you come closer to the poles.

Note that Sweden is like three times the size of Spain in that pic, despite the fact that it's actually smaller than Spain irl (Sweden has an area of 447k square km, while Spain has over 500k).
