All you see him use them for is fighting the Balrog or doing that flare thing with this staff.

Tolkien developed Gandalf and Sauron as counterparts, they both are architects, one in evil and one in good.
In a fight probably Sauron would have smashed Gandalf, because being corrupted by evil makes you stronger, but in the endgame Gandal is better at their game and Sauron is defeated.
