Here's my own take, the original we know is largely based on the war of the Roses and some of the correspondence is unmistakable, specifically the North is Scotland and Casterly Rock is England, the wall might represent Trajan's wall with the Wildlings standing in for Picts.Some other historical, would be the Iron Isles represent Vikings, the Targaeryen Normans (although Valyria would be Troy harking back to British foundational myths) while High Garden would be France (with some elements of Italy) and Dorne Spain. That would leave the Stormlands and the Aerye representing not so much specific peoples as common places and lore in British mythos tho they could be argued to stand in for Ireland and Wales.
Also Martin is an American, the idea of a vast, cold North and a semi-arid south could clearly evoke Canada and Mexico with the other kingdoms representing regions in the USA eg the Stonemen could stand for Apalachia and the Marshlands for the deep south. In reality there's a big mishmash of different influences and sources for inspiration, nevermind many are mythological and not exactly historical, Essos, that's the continent outside the seven kingdoms, looks more like a st6and in for the Classical Mediterranean than continental Europe as a whole, although some lements are more exotic, the Dothraki seem to be clearly based on Mongols.
