What bothered me isn't that she only started talking half way through. What bothered me is that she talked every three seconds afterwards, like the movie was trying to make up for time spent being quiet.
Yeah, their relationship wasn't very well executed but I ended up accepting what they were going for with that. Logan spends the whole movie treating her like shit and wishing she'd fuck off so he can go back to doing his thing and then she's gone and he realizes he actually misses her after all. Him seeing the drones going after the kids is the moment where he realizes the kid ended up growing into him and doesn't want her to get hurt so he injects the whole serum and desperately runs to catch up to her before anything bad happens. The sequence of him realizing he does care about her after all and might be about to lose her too so he desperately gives his 110% to run fast enough to help her doesn't really work if they had a good relationship from the get go. Yeah, I know it's excusing an underdeveloped relationship but I think they managed to do the best with what they had
What bothered me was the half spanish half english bullshit. Laura seemed like she knew english enough so why didn't she just speak it to logan

Honestly, it makes more sense after seeing the movie twice, because at least for me I wasn't very invested in Laura until I found out she was Logan's biological child, and thus missed a bunch of shit in beginning of movie.
Laura idolizes and looks up to Logan as a hero, and most of her first interactions/insights into her father were through comic books, which were highly idealized versions of him. She first sees him in person through the back of a car window, after seeing him tell her pseudo mother to fuck off. She then timidly encounters him again when throwing the ball in front of motel, and if you look closely is basically acting shy/awestruck in his presence, yet Logan is an asshole again. This sets tone for relationship, where Laura feels rejected by Logan, and stops seeing him as a hero.
She eventually starts taking cues from Logan, and starts acting just as shitty/angry as him, because she is imitating his behaviors. This is shown throughout a lot of the movie, I.E. looking at mannequins holding hands, or when she memorizes lines from Shane.
Eventually Laura starts pitying Logan, and seeing him for the man he actually is, and how haunted he is by the past. She also begins accepting that he isn't the hero she thought he was, and that there aren't any heroes (guns) left in the world (valley). The reason she finally speaks to him, after being timid/shy for most part, is because she snaps at how much of an asshole he is, even rejecting her holding his hand when she is his daughter. She goes on to state at Eden that Logan doesn't care about her, and goes off and cries by herself after saying it.
The ending wasn't forced, because you realize that Logan was looking for redemption, and something to live for (after he admitted he wanted to kill himself). He doesn't believe that there is anything worth dying for anymore, yet he chooses to come back, and then die for Laura, because she is his daughter, and he loves her
TL;DR It was all about redemption.
