Better question, what are some good Mexican dishes that are not made in the states at all? Not asking to be insulting, I'm genuinely curious.

that's a very hard question, it'd be easier to tell you some dishes that you won't find at a mexican restaurant in US but are probably eaten by mexicans.
anything involving maiz criollo, quesadilla de flor de calabaza (pumpkin flower quesadilla), escamoles, huitlacoche, discadas (not for the ingredients but because it's traditionally cooked in plow discs).

Man, this is godly stuff. Understand this is a different variety of maize than the one you use for corn on the cob, it isn't sweet.

It's regular "membrillo" candies (quince cheese). They are actually from Spain but became traditional in the colonies as well.

Ours are made of guavas, tejocotes, zapote (all native fruits) as well as pear in addition to quince.

In the US you can get pretty much whatever Mexico has, except for things that use moles (their weird, gross, indigenous sauces), and for good reason (to an Americoon).

I'm sure you can find mostly everything here in the states, it just isn't always the same taste. Typically the bigger the restaurant, or if its a chain, the less authentic it is.

I live in the South so there's not as much influence from Mexico as there is in Cali, but I've seen the street foods pop up in videos. Fruit stands are the best whenever I visit. Also, there used to be a man that sold a drink called "Tepache" which was great.

Not the guy who posted that but given it's titled what Mexicans actually eat you'd actually expect that. Spanish, French and "international" dishes are actually quite common here for what should be obvious reasons.

Tepache is pretty goat, it really hits the spot for extra spicy food

surprisingly good and surprisingly expensive, I've eaten it a couple of times in a restaurant in coyoacan.
the whole dinner lasts about 4 hours and they give you so much mezcal tasters and drinks that you'll definitely get fucked up by the end of it. the taste is intense and overwhelming, you don't even notice when they're in your mouth but chewing them gives you this unique bitter sensation only in the back of your mouth and a cinnamon like spice scent in your nose, the texture is similar to barely cooked semolina and that shit costed me like 50 USD tip, drinks and appetizers included.

You make it sound very tempting despite the price tag.

Also I appreciate the responses in general. I've always been interested in Mexican cuisine but never got the chance before now to really explore.

just keep in mind that bugs are a sorta seasonal thing in restaurants, and that as tempting as t sounds don't eat bugs in markets in mexico city, you'll ruin the whole experience.
bugs are only good if they are cooked by a chef or if they are locally farmed and prepared, something besides those and you're in for a not so pleasant experience.

Those aren't your ultra sweet corn cobs, those are GOAT with mayo, cheese, lime and chili powder

I had them in a place called La Tequila in Guadalajara and I can 100% recommend it
