I'm a little bit paranoid, also italians tend to be suspicious about everything, I've never had a problem in my life with restaurant food and I only eat rare steaks.

However, with mystery meat from places like South America and Portugal I'd generally use it for stew.

Yes. Tough meat types are often best braised over a longer time period. If all you have is cuts cheaper than offal, you'll have to take your time. Terrible cuts like brisket are literally inedible unless slow cooked.
