I think the show wights can't cross water, and there's a river which runs through the gorge. So they'd have to cross the bridge, but it's taking them seven seasons just to get to the wall so they don't seem to be in any rush.

I think I remember Cotter Pyke mentioning "dead things in the water" at Hardhome, so I don't think book wights have that problem.
