Garnet's components are immortal. They have the freedom to defuse at will, albeit due to episode constraints they'd inevitably fuse back at the end, which may show that they're too reliant on each other, yeah.
The comic suggests that Stevonnie, while immortal so long as she remains fused, will inevitably cease to exist. Garnet's not forcing her to defuse, just reminding her.

gems are almost completely immorta. Even if they're shattered their shards are stil alive. they're fine, just lost and lonely and maybe cracked. Probably not the last one though for plot reasons.
