Milk proteins bind with the bitter tannins. They give a kind of bitterness to the tea and are what makes your mouth feel a bit dry after drinking it. IIRC, they are also responsible for making some people feel sick after drinking high-tannin black tea with no milk.

i enjoy black tea for many different kinds that are actually better that way; russian caravan, massala, imperial spice, earl grey, etc. but english breakfast tastes terrible when drunk black, it's just not the proper serving method
