I don't think horses would be too great in that fucking cold and snow. For the horses to not go into hypothermia you'd need actually tons of grain to keep them fed.

It is Obsidian you don't forge it into weapons you chip it with a hammer or stone. I'm assuming Jon's northmen mined it and the Dothraki (who would be skilled in making flint and stone arrows and knives) chipped it into arrow heads and daggers, maybe some long and short spears.
