As usual, it's not actually about race.

The joke was about how Americans from the baby boomer generation (Marge and Homer's generation before timeline fuckery in newer Simpsons seasons) grew up eating and learning American recipes and cuisine from the depression era from their parents. Things like green bean casserole, headcheese, jellied salads, pickled dinners, meatloaf, and many other kinds of cheap processed food dishes that most often lacked any form of spices or seasonings beyond salt, pepper, and maybe paprika or something, because Americans (even great home chefs) had little to no money back then for anything too "fancy". So, when we fast-forward to our generation, our parents were mostly baby boomers like Homer and Marge, so Marge being unfamiliar with oregano is funny to us because it reminds us of those "typical American housewife" dinners and cuisines our parents would sometimes (or often) still serve us today, despite these being the days of all manner of easily-accessible gourmet and exotic cuisines.

But, you know, dem whiteys, sneedchuck, etc.
