The legend of Azor Ahai makes sense in the books since it is extra padding to indicate that out of intense political strife a legendary figure will eventually emerge and take care of shit. In the show it is unnecessary since everything is truncated and there's no need to overstate who it is.

George has said that he wants to model his ending after LotR, in that you have the "big" ending, and then things continue to happen after that. So you have the ring being destroyed, but also the Scouring of the Shire after that. So in the case of ASOIAF, if the show is still being modeled roughly after George's ending of ASOIAF, you'd have the death of Daenerys and the defeat if the Night King, but also Jon's adventures in KL after that. So I think it kind of makes sense.

The writers introduced Bran's ability to affect the past. In both instances (Ned hearing him at the Tower of Joy and him turning Hodor into a retard) it had small impact on the story overall.
