I'm kind of bored and even though I have no talent at all with art I'm going to read a drawing book and just draw some kanji.

Trying to learn kanji, I write down 7 kanji a day, and have about 175 kanji written so far, I have one question though. How do you know what a word means based off of two or 3 kanji? Are you supposed to guess or something else? Please help, I can phonetically sound out the ones i do know, I just don't always know what they mean until i go to google translate.

You learn them as vocabulary? You might see a word and can somewhat guess its meaning using context and the meaning of the kanji, but you'll have to remember them one by one in general. And you have no idea how to pronounce the word when you see the string of kanji, so you have to remember it anyway

It will take a long time to start seeing results, but I think youre in the right path. The same doubts you have now, I had before. But I kept at it and now have reached a fairly intermediate level of reading, I think.

the stroke order doesn't matter except in the case of kanji test

Oh, that's right! 嬉しい is also adj. 嬉しい is used when the subject is a living thing in general. On the other hand, こわい is used when the subject is both person and the things like horror movie, haunted houses and roller coasters. わたしは嬉しい 映画は嬉しい × 絵本は嬉しい× 母は嬉し(そうだ)
