Sex is part of human nature and helps define our personality. Now for example, say you're making a movie about a serial killer. You show him as a kid, being abused by his mother, bullied or whatever, then as an adult you might want to show his inability to maintain an erection during sex, which finishes pushing him towards murder. That's just one basic example.

Basically it's so that actors or directors/producers have an easier time fucking each other. It breaks normal interpersonal boundaries and makes the "talent" more susceptible to cocksucking right off the bat.

No. I don't skip scenes, at least on the first viewing. I want to see a film as the director intended it to be seen. I do look at content advisories beforehand, though, and try to avoid anything that sounds excessively salacious (or gory, for that matter: I'm actually more sensitive to violence than sex).

Sex scenes CAN serve a valid purpose. Most of them are just to titillate the audience, though. I'm mostly OK with light fanservice, but when it reaches the point where it's effectively indistinguishable from softcore porn, I consider it a serious demerit as regards the work as a whole.

Narrative wise, showing the act of sex can reveal things between characters that aren't shown otherside. I think an example is A History of Violence, in the first sex scene we see we can tell the relationship between an older couple who is trying to have sex roleplaying as a cheerleader, we can just tell from this that they have been together for a while want to try new things. In the later sex scenes, we see Viggo's character later having sex on the staircase as Maria Bello's character is trying to fight him off, at first she refuses so we can see she thinks of him as a complete stranger after the story's revelation but then later she is into it.
Yes there are sex scenes that are sometimes needlessly shown but it doesn't mean it's pointless.
