Why hasn't there been a Pokémon-esque game where you have to capture the experiments? There's certainly enough of them to provide variety. You don't even have to fight with them, just have missions to round them all up, while using the abilities of the ones you already have to make things easier.
But no, we get a sandwich-making Flash game. And that's it.

They end up putting him to work as a funfair attraction showing you what your life is like in the future, which is mildly terrifying

It's still a fun show, very easy to watch. I think it holds up. The crossover episodes are especially nostalgic.

My favorite experiment was having Stitch land somewhere in Japan and an adult Lilo visits him.

That experiment failed so spectacularly that Disney decided that the Stitch! anime series is non-canon.

Wouldn't the act of knowing parts of the future alter your actions going forward?

The future is an alternate one in which you were absent for 10 years anyway. It's really not a good indication of what your life will be like, since it's a future in which you weren't living it for a decade.

Really, the only thing you get to see is what you and those close to you will look like, if any of them are dead, and get a bit of an It's A Wonderful Life experience to see where they'd be without you.
