I remember these two because I think there's one company that did the intros around this time. These shows had like early episodes that sort of lived up to the atmosphere evoked by their intros but then as the shows descended into soap operas the cinematic openings just made the contrast painful

well, you can argue that it's too long in comparison to other shows but it should be noted that showing the geography of every episode in the intro, the miniature cities/villages/landscapes in combination with the music, especially the violin, very much showcase what the show is about

Not a bad idea. If you are that early in, I should warn you that the show slows down considerably around the early-middle until the climax. A lot of people drop the show for it but it's more than worth the payoff to push through.
Not that the episodes are BAD, but things definitely start to slow down to a point that most viewers wouldn't expect from a series like evangelion. Don't forget to actually listen to dialog, everything said is incredibly important to understand what's going on in the final few episodes.
I'm excited for you. I would kill to watch Evangelion again for the first time.
