I love Cruise as an actor but this movie didn't do much for me. It felt like a soulless version of After Hours.
One possibility is that as Christmas replaced the pagan Saturanalia, which was a feast with much sex and liveliness of the ancient world, there is a replacement underlying our own Christmas. Basically saying that Saturnalia and orgy underlie what we perceive to be Christmas. Christmas is also the most wholesome American holiday, so to have the sacred and profane interwoven intimately heightens the contrast and contradiction. Further Christmas is a family holiday, and in some ways Cruise's character enters another "family's" holiday and they have rejected him, which could have a familial rejection theme which works with his perceived betrayal from his wife.
In EWS Christmas Lights and decorations are symbolizing when they are in the goyim world. That's when they are in the rainbow. Those are rainbow lights.
Being "over the rainbow" is when you are in the "inner circle". In those places, there are no "normie" decorations and they certainly don't celebrate Christmas.
You'll notice that in the scenes in the last half, there's not a single Christmas light in the mansion.

You're told that it represents the star that led the three wise men to Jesus, however satanists believe it represents satan himself. One of the major themes of this film is that everything can have dual meanings. On its surface, the party appears to be celebrating a Christian holiday. To those who worship satan, however, the same symbols have an entirely different meaning. That's why the scene can be so unnerving. You're seeing things that should be nice and festive, yet there's a constant undercurrent of menace and malevolence.

what bothers me is in the scene at the billiard table where the rich guy talks to Bill about the party, there's a moment where the color filter goes from a kind of red to a kind of green (or the reverse). No idea if it was a mistake that happened due to Kubrick reshooting scenes over and over and that one take had a different camera setting or something.

Yes it is. The rainbow world isn't as real because it's an artificial control structure where unpleasant truths are blocked out.
There's an analogous relationship here with how the world is for most children. You deliberately keep a child away from a variety of truths as a parent and distract them with simpler child-friendly white lies about how things work.
Also just see that Hypernormalization documentary if you haven't already, it's pretty much made specifically to explain the distinction of the oversimplified fake world we participate in as a way of avoiding the more complicated, out of control, and disturbing truths of the real world.

I think this scene just serves this purpose, to kind of show that as soon as he's taking the first step to entering this weird world of sexual encounters (buying a costume for the party), he already starts witnessing a form of deviant sex. Just generally building up the sexuality and perversion.

There were definitely a few changes made after its theatrical release. A Hindu chant was changed and the scene with kidman and cruise naked in front of a mirror was zoomed in/cropped. Also the line where kidman says "we made love" was dubbed to "you and I had sex"
The cut he delivered to Warner wasn't final and chances are a lot of changes would've occurred before release. Also the sound track wasn't done and the sound designer had to guess which versions of songs should be used.
What if one is well acquainted with unpleasant truths and chooses to focus their attention on the good in their short span of existence in this rather polarized world? Would you call it "running from reality" or some such? I understand what you're saying perfectly well, and how it fits into the film's symbolism, but I don't necessarily agree with the dichotomy of "harsh reality" and "ignorant rainbows" or "dark truth" and "happy ignorance", though it can, no doubt, be applied as a generalization and be mostly accurate in describing how people perceive the world. But it's by no means universal.
