When he started strangling Melisandre for no reason, when he was never violent towards any woman in the book, I instantly knew they're gonna make him into a villain.

in book 2 he is clearly an antagonist. Second half of book 3-5 he is a protagonist. I don't doubt before the end he will flip back, if he doesn't die in the battle of Ice

He is only an antagonist to Tyrion though and we all know how terrible everyone else in King's Landing is. Tyrion is the protagonist who fights alongside the villains of the story so Stannis is the hero but also the antagonist to Tyrion.

Not really. At no point they are at odds. Sure, Stannis burns a leech and calls Robb an usurper, but they never really have an opportunity to hurt each other.
No Renly alliance, and he inadvertently unites Lannister and Tyrell which means no hope for Stark victory. His army also draws Tywin away from the trap Robb was setting for him because Tywin leaves the Riverlands with most of his army to go defend King's Landing. Even though Stannis and Robb never directly do harm to one another, its clear that Stannis means to and does both on accident and on purpose (in the case of Renly's assasination, Cat was there to unite the Stark and Baratheon armies something Stannis would never agree to)
