Because defending against a knife is ridiculously difficult. Possibly even harder against an untrained opponent, since they're typically more erratic and unpredictable than an expert. Movies make it look easy, but you have almost no chance of escaping a knife attack unscathed.

Because soldiers typically get minimal CQC training, which rarely includes disarming an ax-wielding maniac. Also, swinging an ax isn't exactly hard to do, and he may not have had anywhere to go or anything to deflect it with.
