I believe they used practical effects for the entire movie and then the studio or someone decided to cover it all up in cgi.

That's the first takes with the Rancor. He was originally meant to be an entirely done by a short guy in a rubber suit, George wanted him to be the ultimate tribute to old kaiju movies. But according to the special effects guys present "it just didn't work well" and they decided to do stop motion instead.
