Grey Jedi existing as a separate faction of some kind really is stupid. I kind of understand it as more-or-less Jedi who hold personally conflicting views with Jedi dogma, so just Jedi Protestants, but really there should be Jedi, Sith and decentralized, non-conformist enclaves of exceptionally wilful Force users who train to temper their emotions, allowing themselves access to 'darker' powers at certain times. Don't even call them Jedi anything, they're their own thing.

That is where you're mistaken. The Dark Side is not an option, it's a path. The idea of ying and yang assumes that one would always make the right choice when given a selfish option. The more times you pick the selfish option - the less likely you will see the 'right' choice as right. It then becomes your right. The force is about everyone and everything; it's not about you.

I've always associated Jedi and Sith as separate schools of the force, not opposites at the end of a spectrum so in theory I have no issue with other schools existing outside of these two but to dumb it down to a 3rd inbetween is just boring.
Personally if I had my way it would be.
1. Blue saber is to honor the ancient school Je-ko.
2. Green saber is to honor the ancient school of Di-ka.
3. Both merged schools as they both considered each teachings useful to one another and birthed a new school called Jedi.
4. Purple saber is to honor the ancient school of Xentu. Very few force sensitive beings in the Jedi order practice this school anymore as it uses techniques associated with the dark side.
5. Red saber just being the Sith.

The entire categorization is flawed from the Start. The Jedi should not be an ideological or religious order, it should be purely military/political. The Sith shouldn't even be a thing beyond a pejorative term to describe someone that uses the force irresponsibly. Greys shouldn't have any kind of code, they should just be called "force users that aren't a member of the Jedi Order.
There should have been multiple organizations that had force users for any numbers of functions in society with variation in how the force was used and to what end. The Jedi should have been nothing more than one of those organizations rather than being some broad sect.
The idea of idiosyncratic Jedi existing outside of the order and its dogmas is fine, but this entire 'ying yang' view of the force is horseshit.
There is no active dark side. The Sith, and most dark side users are selfish humanists who see the force as a font of power to be tapped into and used for their own betterment. The Jedi try to listen for and understand the will of the force and grow in accordance with its will. The force is an inherently good entity.
The Jedi order grew apart from the goodness inherent in the force in favor of neutrality and politics, they opposed not only evil, but also love (both eros and agape, they were against attachment), they began to view their responsibility to the Republic, to DEMOCRACY! as more important than their responsibility to the will of the force. Anakin was given to the Jedi as a chosen one to show them the power of love, to get them set straight. The Jedi Order failed that test, while Luke succeeded. Once Luke had succeeded, the son of the force, Anakin, faded from existence, having fulfilled the prophecy and restored balance to the force not just through destroying evil, but through restoring good.

I'm not familar with them so I've only focused on the Lucas trilogies sabers. Personally having a multi rainbow collection of sabers bogs down the mythos of the force in my eyes even though I do like the idea of wielding yellow or orange sabers.
The force is like the yin-yang. It makes sense that in the dark side, which represents passion and untamed emotion, there's cold machinery at the centre like we see in the Galactic Empire. It also makes sense that in the light side of the force at the centre holds a passion for life and kindness, like we see in Luke Skywalker and Obi-Wan.
I imagine OT was based on medieval european fantasy with kings and queens ruling the galaxy and the empire gobbling the free kingdoms up with its massive strength. Most courts had their own orders of jedi knights. Kenobi was part of Leias court which is why she sent for his help. PT messed up the lore by making Jedi knight the order and they were asian mystics instead medieval european knights. Geirge Lucas messed up a lot of things in the PT. Like Kenobis clothes being jedi clothes when they were just desert clothes.

The force isn't some yin-yang shit. The Dark side of the force is like the Dark Side of a person's personality. It's a corruption.
When you are powerful in the force and don't practice extreme asceticism and refrain from temptations your power pushes you to an inevitable spiral of indulgence and pride that destroys the individual and all around them. They become a gaping wound that devours all virtue until they loose their humanity.
This is why Darth Vader is a faceless robot man. This is why the Empire is sterile. This is why the Jedi don't fuck bitches. This is why the Jedi divorce themselves from all sentimental attachments and focus on universal compassion.
Sentinels were the people they sent to bum fuck nowhere to resolve political disputes as they were proficient in the force as well as the blade.
