Is the industry trying to appeal to more demographics working, or would you say it has the opposite effect? Do you think there is more money to be made just trying to appeal to a single audience the best you can, rather than trying to please everyone?

Manga is a success because it appeals to so many demographics, with both subject matter and targeted audiences.
For example Shonen, like One Piece, is targeted at 13 - 18 year old boys.
One Piece is a terrible example since all the women have the exact same body, and none of them are sexy or behaves in a sexually enticing manner. Since there's no actual nudity or even gratuitous cheesecake, One Piece might probably be the very least sexy anime I have ever seen, and for that reason you shouldn't let Mr. Oda tell you anything about women. They're just anorexic men whom Sanji inexplicably finds attractive in his universe.
Well, if all media took the path of least resistance to money everything would just be porn. It's up to the artist to decide if they have aspirations of making a broader, deeper commentary on life/humankind or if they just want the clicks and the shekels.

It's especially annoying because in every other facet of character design he's so wildly creative and out there. Pretty much every main male character oozes style and is instantly recognizable, but every female character looks exactly the same.

Nothing wrong with making your characters attractive and even including a little fanservice now and then, cheesecake OR beefcake. But the reason stuff like Oda's and Deodato's women are shit is that they look like what an 11 year old would like instead of what an adult would, just sticks with balloons attached and mile long legs.
Someone like Cho, Mann, Manara, and other good cheesecake artists draws a sexy woman? Nice, because it doubles as just well done art so someone not attracted to it can appreciate it as well. Someone like Oda or Liefeld draws a sexy woman? I feel like a fucking child looking at a truck stop skin rag and makes me embarrassed about what I'm reading. user do you know how insanely popular One Piece actually is in Japan? It's almost exactly 50/50 men and women that like that series over there. It's only mostly liked by guys in the west because most anime and manga fans are guys to begin with.
One Piece has to be the ugliest manga and anime I know. You can bring up Aku no Hana or the like but those are made "unique" on purpose because they're supposed to be artsy. One Piece on the other hand is a cashcow shonen that never ends, and every time my korean friends try to get me into it I have to hold my barf.

Sexualization isn't bad. It's just a little lopsided. We have way too much lady sexualization and not enough dude sexualization. Personally I prefer cheesecake to beefcake but I can see how people who prefer looking at sexy dudes might feel a lack of content, especially in the comic and cartoon industry. Someday somebody is gonna tap that demographic and they're gonna be rich!
